Caramelized Pears with Stilton Cheese and Caramel Sauce Dessert

I love making desserts with cooked fruit. Super healthy and super easy.  This one seems really decadent and looks like something you'd only find at a fancy restaurant, but it's so easy.  I altered this dessert from America's Test Kitchen's pear with caramel sauce and blue cheese, to accommodate less people and to be healthier, by using much less cream then the original and less sugar.

Ingredients

(Yields 4 servings)
2 organic pears sliced in half and cored
1/4 cup of filtered water
1/3 cup of brown sugar
1 tablespoon of organic heavy cream
Stilton Cheese (preferably a fruit flavored one)
pinch of salt

Instructions
  1. Put water into a 12 inch skillet (or 10 inch if you don't have).  Then place the sugar in the middle of the pan be careful not to let it touch the sides bring to a boil on high heat, stirring occasionally.
  2. Place pears cut in half and cored into the pan with the skin side up.  Turn down heat to medium high and cook for 13-15 min covered until pears are almost tender. 
  3. uncover and reduce heat to medium 3-5 min. Pour the cream and add a pinch of salt to the caramel sauce
  4. move the pairs to a plate, drizzle the caramel sauce  over it and either sprinkle some of the cheese on top or add a wedge to the side.  Serve immediately.
