Peanut Butter Chocolate Rice Krispy Bars (GF No Bake) Perfect for Pot Lucks and Lunches!

My husband needed to bring a dessert for an office potluck, so I wanted to make something everyone would like (who doesn't like chocolate and peanut butter), uses simple ingredients (uses ingredients in most peoples pantry's), not too unhealthy (I wouldn't call this health food but it is healthier than normal Rice Krispy bars), is easy to make (no bake all you need is a microwave and a bowl an spoon), transports well (my husband commutes on a train to work), and doesn't need refrigeration. Or in other words the perfect potluck dessert. This would also be great for lunches, picnics, road trips, holidays, gifts, etc.

My husband and I were invited to a cook out at our friends house. They were making burgers on the grill and a salad. While they didn't ask us to bring anything I thought it would be nice to make something. The tricky thing is the couple hosting follows the Paleo diet and one of them hates all veggies and fruit. Hummmm... So I had to think what would be Paleo that most people would like, that wouldn't need to be refrigerated, and doesn't have veggies or fruit? I scoured through my pinterest boards, (finally all my time putzing around on pinterest has paid off), and then I had it, brownies. Who doesn't like brownies? They're always great for a picnic or pot luck!
Finally a pudding so healthy you can have it for breakfast! I love pudding because it feels like a truly decadent dessert but really is rather light. The only reason I don't make it all the time is I hate having to constantly stir pudding while it cooks. And I can't find an instant organic pudding in the store. I'm so excited to finally have a healthy alternative. The key is to use chia seeds instead of corn starch (which is GMO and spikes your blood sugar).
This time of the year we have as many strawberries as we can eat (we harvest about 1-2 lbs a day in June). I try to eat as many fresh as I can because really they are best fresh. I also like to eat them fresh by holding the stems and eating around them, so it's also less work for me to eat them fresh since I don't need to hull (take the stems and green leaves off) them then.

Lately I've been cookie obsessed and trying to create healthy cookies. I try not to taste any of the dough with out baking it but it's just to hard not to sometimes. I've been lucky that I've never got sick because 94% of the 50,000 people who've gotten sick with salmonella and E.coli
remember eating raw cookie dough prior to the symptoms. So I had to make a you can eat it raw cookie mix that's healthy to boot. Note when I say raw I mean not baked in the oven. If your following a raw diet this would not qualify (flour, PB, and beans are cooked).

Oh Limoncello where have you been all my life? I had never even heard of Limoncello before receiving this sample of Villa Massas, so I did so research about it and it's actually used in a lot of dessert recipes as well as cocktails. That's what I'm talking about spirits that do double duty!
Healthy Dark Chocolate Zuchinni Brownies With Easy No Sugar Peanut Butter Sauce (Low Sugar, Low Fat)

Last summer I tried Jessica Seinfield's veggie brownies in an effort to trick my nephew into eating veggies (he HATES veggies). It was an epic fail! Even my husband who is a total chocoholic told me he'd eat them but they are not that great. I'm all for healthy but only if you can't tell the difference! While I gave up on her recipe I did not give up on the ideal of eating veggies with your brownies. I figured using more tried and true veggie ingredients used in quick breads like pumpkin and zucchini would make more sense than the spinach and carrot pulp used in Jessica Seinfield's recipe. I decided to try zucchini first since I have a huge one in my fridge, and plan to try a pumpkin version next and a gluten free and a grain free version some time in the future, so check back soon!
As I said in my last post I decided to be a baking rebel for Thanksgiving this year and make 2 recipes I had developed for dessert on the fly (I had never made it before). Both my Sweet Potato Cheesecake pie and my Dutch Apple Tart turned out great to my relief! My apple tart was all gone.
I hope everyone had a great Thanksgiving! It was cold here but likely the roads were perfect. We hosted this year just like we have for the last 6 years. I use to get carried away with trying out new side dishes in addition to all the classic Thanksgiving feast and I still made desserts and beverages. Well I learned it was all just too much and frankly all anybody seemed to care about was the basics anyways. So I learned to focus on just the basics and to put all my creative energy into making a dessert or two and I remind myself I can buy a dessert some where if it's a total flop. Well this year I made two desserts (sweet potato cheesecake and a dutch apple tart) from scratch with recipes I had made up and it was my first time making them. Yes I do like to bake dangerously! Luckily they turned out great and were a great hit.
