I finally had a chance to make chocolate peanut butter popsicles! I think my husband (who's obsessed with chocolate and peanut butter) was more than happy that I plan to make this often. This is modified from my hot chocolate and peanut butter recipe. Hmm.... what next for my adventures in popsicles? Stay tuned!

Chocolate Peanut Butter Popsicles
(makes 6, 2 oz pops)
(makes 6, 2 oz pops)
- 1 1/2 cups of whole organic milk (not skim)
- 1/4 cup of organic half and half (or cream)
- 3 tablespoon of organic peanut butter
- 2 tablespoons of sugar
- 1 tablespoon of stevia (to lower the sugar amount naturally, but could substitute with 2 tablespoons of sugar or honey)
- 1/4 cup of cocoa
- 1/4 cup of dark chocolate chips
- heat on medium milk, cream, sugar, stevia, and peanut butter until almost boiling
- make sure you have room in the freezer
- turn the heat off and wisk in the cocoa slowly until incorporated
- stir in chocolate chips until all melted and all ingredients are incorporated
- let the mixture cool to room temp or place in the fridge
- pour into molds leaving 1/4 to 1/2 inch at the top and place in the freezer for at least 4 hours (make sure it's as far back in the freezer as possible to freeze faster and more evenly).
