Healthy Easy Triscuit Caprese Brushetta Bites with only 3 ingredients

I try to always have easy healthy snacks on hand so I'm not tempted to eat bad stuff.  This month I plan to share with you my favorites.  First up is my recent favorite I like to call Brushetta Bites.
Let me start by saying this is not a sponsored post nor did I get any samples for this post.

Lately I've been obsessed with triscuits. Like I have some most days.  I usually have a light lunch and a hearty snack a few hours later.

 I love that triscuits are non gmo,  made with simple ingredients, has a decent amount of fiber, and has a variety of flavors and possibilities.

Brushetta Bites makes a great snack or appetizer.  What I love about this is it only involves 3 ingredients triscuits, mozzerella, and brushetta.  It takes no time to make and taste a little like pizza.  If you want to make it a caprese version simply add a basil leaf or pesto. I would have added that if it was summer and used basil from my garden.

Brushetta Bites


Ingredients
Triscuits (roasted garlic or tomato and olive oil)
Brushetta ( I used Trader Joe's)
Fresh mozzarella (could use reduced fat to be healthier)
Garlic powder and black pepper to taste (optional)


Directions
Simply spread brushetta into the triscuit.  You could place a basil leaf on top or pesto too if you want. 


 Then break off a piece of mozzarella to place on top about the same size to the cracker.  I also like to put garlic powder and freshly ground black pepper on top if the mozzarella.  And viola!  It's ready to serve or eat.
