I got this idea from Backyard Farming: the urban homestead They had a version with cream cheese, so I thought," What if I use mascarpone cheese, white and dark chocolate and grill it with coconut oil?" So of course I had to try it. And now I am addicted. I often have it for breakfast or lunch. It's surprisingly filling and healthy even though it seems bad. Those are always my favorites! Great for a hot summer day (today has a heat index of over a 100 degrees).

Chocolate, Strawberry Grilled Sandwich
Ingredients
- Organic sandwich bread (I try to get organinc wheat products because sometimes wheat is sprayed with Round up shortly before harvest)
- Organic strawberries (buy organic because strawberries are grown with more pesticides than your average fruit or veggie.
- coconut oil
- Mascarpone cheese
- spread coconut oil on the bread
- place on a medium heat griddle or cast iron skillet
- spread Mascarpone cheese on each side
- slice 1-2 strawberries and place on one piece of bread along with white and dark chocolate chips
- place the other piece of bread on top, turn the heat off and cover, leave for a minute for the chocolate to melt and serve warm. Enjoy!

Sounds like something my wife would love. Maybe I'll have to make it for her.
