Caprese Grilled Cheese Sandwich Recipe

Welcome to my new food obsession caprese salad turned grilled cheese.  I've been having this every day.  I can't stop it's so easy and good!  I make this every this all the time in early fall when our garden is full of so many tomatoes I don't know what to do with them, and lots and lots of basil. 

Caprese Grilled Cheese Sandwich 
Pesto (made with olive oil)
slices of bread
Pasture raised butter at room temperature
large sliced organic tomato
fresh mozzarella
pink salt, freshly ground black pepper and garlic powder

  1. Heat a cast iron skillet on low and spread room temperature butter on one side of each piece of bread and spread pesto on the other side
  2. Place a slice of mozzarella on one slice of bread on top of the pesto (one slice per sandwich)
  3. Place a slice of tomato on top of the mozzarella and sprinkle salt, freshly ground pepper, and garlic powder
  4. place the other piece of bread on top of the other piece of bread (with mozzarella and tomato) and put onto the cast iron skillet 
  5. Flip the sandwich with a spatula after golden brown (about 2 min)  make sure not to burn!
