I have been dreaming of making my own popsicles for the last few weeks. And now my dreams can come true because I purchased the star popsicle mold at Sur La Table that can also be purchased at amazon.com. I love it, especially the fact that it drips into the stick/top of the mold. No more messy popsicles! So much better than store bought pops. My favorite popsicle is coconut and given that I've been obsessed with coconuts after learning about the health benefits of coconuts of course I had to try.....
I started my trials of making coconut popsicles first by adding coconut milk, stevia, and coconut flakes. That turned out way too watery. So I looked at a variety of recipes and noticed a lot used sweetened condensed milk. So I added some to coconut milk and it was so...much better.
Other Variations
Vegan
For a vegan version you could try coconut cream, but I haven't tried it yet so I don't know if you can sub the condensed milk in this recipe for that. Pickles and Honey has a Trader Joe copy cat vegan coconut pop recipe you could try too!
Chocolate Dipped
Why not try to dip it in chocolate? Hmmm... like a frozen mounds bar.
Coconut Milk Popsicle Recipe
Ingredients
1 3/4 cup of coconut milk
1/4 cup of sweetened condensed milk
1/4 cup of unsweetened coconut flakes
Directions
Mix the above ingredients together in a large measuring cup (2-4 cup size)
Pour into molds yields 2 cups of liquid (six popsicles for my mold), leave an 1/2 inch for expansion when feezing
Freeze for at least 4 hours in your mold and enjoy!
